Red Lentil Kale Soup

Ingredients:

  • 2 tablespoons coconut oil
  • 2-4 celery stalks (with leaves)
  • 1 can diced tomatoes
  • 1 orange bell pepper
  • 1 container vegetable broth (4-5 cups)
  • 1 cup red lentils
  • 1 teaspoon salt
  • 2 cups shredded kale
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chilli powder

Navy Bean Pumpkin Muffins

  • 1 can navy beans (or any white beans)
  • 1/2 cup- 3/4 cup pumpkin purée
  • 1/4 cup honey
  • 2 teaspoons vanilla
  • 1/2 cup oats
  • 1/4 cup almond butter

Kale Quinoa Salad

Ingredients:

For the salad:

  • 1 cup golden & black quinoa
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 3 cups kale
  • 1 large carrot
  • 1/4 cup pepitas (pumpkin seeds)
  • 1 tablespoon hemp hearts
  • Salt and pepper to taste

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup fig balsamic vinegar
  • 2 teaspoons Dijon mustard
  • Dash of garlic powder and salt

Carrot Cake Oatmeal

Ingredients:

  • 1 cup grated carrot
  • 2/3 cup rolled oats
  • 2 tablespoons raisins
  • 1 1/2 cups soy or almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon honey
  • Greek yogurt (Oikos® or PC Skyr)

At the end of high school I became obsessed with oatmeal. I think I ate it for almost every meal for at least three years! What I love about oatmeal is that it’s a blank canvas. Mushroom Spinach Artichoke Fettuccine

Ingredients:

  • 4 1/2 cups water
  • 15 ounces Fettuccine
  • 1 can artichoke hearts, drained
  • 8 ounces cremini mushrooms
  • 1 medium onion
  • 2 cloves garlic
  • 1/2 teaspoon basil
  • Salt and ground black pepper to taste
  • 2 cups baby spinach
  • 1 cup Parmesan cheese
  • 2 tablespoons butter
