Kale Quinoa Salad

Ingredients:

For the salad:

  • 1 cup golden & black quinoa
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 3 cups kale
  • 1 large carrot
  • 1/4 cup pepitas (pumpkin seeds)
  • 1 tablespoon hemp hearts
  • Salt and pepper to taste

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup fig balsamic vinegar
  • 2 teaspoons Dijon mustard
  • Dash of garlic powder and salt
