- 1 tablespoon Extra Virgin Olive Oil
- 2 cups shredded carrots
- 1/2 red bell pepper
- 1 cup frozen corn
- 2 stalks celery
- 1 can chickpeas
- 3/4cup Tostitos® salsa
- Seasoning: salt, pepper, ground cumin, chilli powder, garlic powder
- 1/2 avocado
I modified a black bean quesadilla recipe and came up with this delicious chickpea bowl! Gluten-free and dairy-free, what could be better? Let’s get started!
Heat up the oil in a frying pan and add the carrots. Then add the corn, red bell pepper, celery, and all of your favourite seasonings. Cook for about 5 minutes.
Wash the chickpeas and pour them into the pan with the rest of the vegetables.
Cover and cook for a few minutes before stirring in the salsa, then cook uncovered for another 5- 7 minutes.
Top with some fresh avocado and this Fiesta Bowl will become your new go-new comfort food.
