Vegetable Soup


  • Clarified butter
  • 1 small onion
  • 3 carrots
  • 2 red potatoes
  • 1 sweet potato
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 2 celery stalks
  • 1 container of vegetable broth
  • 3 cups water
  • 1/4 tablespoon salt
  • Pinch of pepper
  • Pinch of basil
  • Pinch of oregano
  • Pinch of curry powder

Vegetable soup has been a staple in my diet for as long as I can remember. Not only is this recipe Whole 30 approved, but you can pretty much make it into what every you want by changing the ingredients. Add your favourite veggies or spices or substitute the vegetable broth for chicken or beef broth and voilà a whole new dish!

I like to chop all of my veggies up beforehand. Cut the potatoes, celery, carrots, and peppers into cubes.

Next, brown the onions in the butter in a large pot for a few minutes. Then add the container of broth. I usually let this heat up for a couple of minutes before adding my veggies and spices. Once they’re all in the pot all you have to do is let it cook! I add varying amounts of water depending on the kind of vegetables I’m using. Here I added 3 cups of water after everything was mixed together.

A warm bowl of soup on a cold winter’s day- is there anything better? Bon appétit!

Note: if you’re not a Whole 30-er, you could also add noodles, rice, beans, or lentils!
