Artichoke Bruschetta


  • 1 (8 ounce) package of light cream cheese
  • 1 cup mayonnaise
  • 1 (14 ounce) can of artichoke hearts, drained and chopped
  • 1 cup grated Parmesan cheese
  • 1 cup grated Mozzarella cheese
  • 1 teaspoon garlic salt
  • 1 whole wheat French baguette

My Mom discovered this recipe from a co-worker and since then it has been a snack staple. Let’s get started!

Beat the creme cheese and mayonnaise until smooth, then add in the chopped artichoke hearts.

Grate the Parmesan and Mozzarella cheese. Parmesan cheese can be pretty expensive, so I normally use grated Parmesan cheese (from a can). This time though, I bought the real deal and it was delicious.

Pour the cheese onto your cream cheese artichoke mixture and blend it all in.

Turn your broiler on to high.

Cut the baguette at an angle into approximate 1 inch slices (fancy) and spread the artichoke mixture onto the baguette slices (be generous!).

Broil in the oven for 2-3 minutes or until the tops get a bit brown. They are now ready to serve!

When you’re done, you’re going to have a ton of artichoke mixture left over. So you can either buy a few baguettes to feed a crowd, or you could spread the mixture out on a pie plate and bake at 350ºF  for 30 minutes. You can then serve this with baguette slices or chips (or whatever else you want!). Bon appétit!
