Zucchini Carrot Raisin Muffins


  • 1/2 cup sugar
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/3 cup boiling water
  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 cup raisins
  • 2 cups whole wheat flour
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon

You can’t go wrong with these Zucchini Carrot Raisin Muffins. Set your oven to 350ºF and let’s get started!

In one bowl add the sugar, EVOO, salt, eggs, vanilla, boiling water, zucchini, and carrots.

In the second bowl add the flour, baking soda, and ground cinnamon.

Pour the dry ingredients into the wet ingredient bowl and mix it up!

Add the raisins. I love raisins so I add 1 cup, but you can add as much as you would like.

Scoop the batter into muffin trays and bake them in the oven for 20 minutes.

You’ll know when they’re done because your kitchen will smell like delicious home-made muffins. Bon appétit!

Makes 12-16 muffins (and you could easily eat all of them by yourself).
