Baked Cauliflower Falafels

Ingredients:

  • 2 cups cauliflower “rice”
  • 1 shallot
  • 1/2 cup fresh parsley leaves
  • 1/4 cup coconut flour
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 2 teaspoons cumin
  • salt, pepper

These were one of my favourite things to make during my September Whole 30. Simple, quick, delicious. You can’t ask for much else in a recipe! To make life even easier I bought a bag of “cauliflower rice” so that I didn’t have to cut and process a whole cauliflower…thanks Walmart! Turn your oven to 400F and let’s get started. Read more

Stuffed Thanksgiving Pumpkins

Ingredients:

  • Small pumpkins (2 white casper pumpkins + 1 small orange pumpkin)
  • 1 can 100% pumpkin purée
  • 1 sweet potato
  • 1 tablespoon coconut oil
  • 1/2 cup dried cranberries
  • 1/4 cup pecans
  • Cinnamon and pumpkin pie spice
