- 2 cups cauliflower “rice”
- 1 shallot
- 1/2 cup fresh parsley leaves
- 1/4 cup coconut flour
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon turmeric
- 2 teaspoons cumin
- salt, pepper
These were one of my favourite things to make during my September Whole 30. Simple, quick, delicious. You can’t ask for much else in a recipe! To make life even easier I bought a bag of “cauliflower rice” so that I didn’t have to cut and process a whole cauliflower…thanks Walmart! Turn your oven to 400F and let’s get started.
One of the things I love about Ottawa is the proximity of the city to beautiful Ontario parks. I usually go to Gatineau Park for the occasional hike but had heard about the view from Eagle’s Nest in Greater Madawaska near Calabogie, Ontario and decided to take a drive to experience it for myself.
